Triple "A" Protocol - Flour

Triple "A" flour:

  • is obtained from grains grown using crop rotation with no pesticides, herbicides, PPPs or synthetic fertilizers;
  • is produced from grains of ancient varieties obtained through mass selection with naturally occurring or manually controlled crossbreeding (not selected for resistance to chemical treatments);
  • is obtained from grains harvested when optimally ripe, possibly left to rest in the field in sheaves before threshing;
  • is freshly milled;
  • is produced in artisan mills using millstones or cylinders, which preserve nutrients;
  • is labelled specifying the grain varieties used, year of harvest, production area, and date of milling;
  • is labelled specifying the date of harvest, processing and traceability of the entire production chain.
