is made from olives from non-intensive farming, grown using no synthetic substances, herbicides or synthetic pesticides and in a manner that protects varietal diversity, the local environment and the landscape;
is made from healthy olives, harvested when optimally ripe either by hand or with equipment that prevents damages and protects the plants, and pressed in the shortest time possible no later than 24 hours from harvest;
is made from olives of a single variety or from blends of olive varieties, but not from blends of oils;
is made from first pressed oils cold-pressed by mechanical means only, preferably by stone crushing, and extracted using the traditional “frail” method;
is subject to no chemical or physical corrections;
is properly stored in appropriate containers;
is labelled specifying the date of harvest, processing and traceability of the entire production chain.
