Triple "A" protocol - pepper

Triple "A" pepper:

  • is obtained from wild plants or from plantations preserving biodiversity and soil fertility;
  • is exclusively hand-picked;
  • is processed within 24 hours of picking;
  • is obtained from optimally ripe, manually processed peppercorns selected based on the desired processing method;
  • is initially washed in clean running water;
  • is oven-dried with no contact with plastic materials and in a way that fully preserves its organoleptic properties and prevents damages and residual moisture, thus completely eliminating the risk of rot or fermentation;
  • has no added ingredients, whiteners, colorings or preservatives;
  • is labelled specifying the date of harvest, processing method, best-before date and traceability of the entire production chain.
