Triple "A" Protocol - salted capers

Triple "A" salted capers:

  • are made from wild caper buds picked preserving plant regeneration or sourced from plantations preserving biodiversity and soil fertility;
  • are hand-picked when optimally ripe with the staggered harvest method; they are obtained from perfectly healthy buds harvested when naturally ripe;
  • are immediately processed at the end of the harvest;
  • are soaked in light brine made with non-aggressive untreated sea salt;
  • are then drained and left to age for at least 1 month before being placed on the market;
  • contain no added ingredients, whiteners, colorings or preservatives;
  • are labelled specifying the date of harvest, processing method, best-before date and traceability of the entire production chain
