Triple "A" Protocol - legumes

Triple "A" legumes:

  • are grown using no pesticides, herbicides, PPPs or synthetic fertilizers;
  • are obtained from single-variety seeds of ancient legume cultivars through mass selection, with naturally occurring or manually controlled crossbreeding
  • are thoroughly cleaned by hand or with machines without damaging them;
  • are made of undamaged seeds carefully selected for size and color to be as uniform as possible;
  • are harvested when optimally ripe and left to dry in the field or naturally in the air, with no forced artificial drying as it could alter their nutritional properties and flavor;
  • are warehoused indoors off the ground and properly packaged and stored;
  • are labelled specifying the best-before date, which can be used to trace the entire production chain.
