Triple "A" Protocol - cereal grains

Triple "A" cereal grains:

  • are grown using no pesticides, herbicides, PPPs or synthetic fertilizers;
  • are obtained from single-variety seeds of ancient cereal cultivars through mass selection, with naturally occurring or manually controlled crossbreeding;
  • are either wholegrain or processed manually or with machines that clean them thoroughly without damaging them;
  • are made of undamaged seeds carefully selected for size and color to be as uniform as possible;
  • the ears are harvested when optimally ripe and preferably left to rest in sheaves. No forced artificial drying is allowed as it could alter their nutritional properties and flavor;
  • are warehoused indoors off the ground and properly packaged and stored;
  • are labelled specifying the best-before date, which can be used to trace the entire production chain.
